Gabriel was spectacular. Friendly, attentive, and gave wonderful recommendations. We will definitely be back and requesting him. We ordered the spicy rigatoni, meatballs and the Caesar salad. All were lovely. Finished the evening with a carrot cake and dessert Port wine. Beautiful ambiance... nice volume of music.

I love love loved Carbone! I really wasn't expecting too much because I've heard that this restaurant is overhyped but I can tell you this is not the case! We got here right on time for our reservation and we walked into the most beautiful restaurant. It is sooooo dark inside at night though so I can imagine for some people it would be difficult to see or read the menu lol. We were told to wait a few minutes while they got our table ready and were directed to some seating near the hostess stand. Our server, Brick, was sooo attentive and helpful. He had the most infectious personality and smile! There was complimentary bread, salami and pickled vegetables to start. The bread was so good, I was trying not to eat it all and fill myself up too early! We ended up getting the Caesar salad and spicy vodka rigatoni. The salad was made table side which is really fun and it was soooo good! The croutons were perfection! I consider my tolerance for spice to be top tier so I wasn't expecting much from the pasta but I can definitely say whoever the chef was this night did their thing! I had so many peppers in my pasta and there was definitely a kick! It was delicious!! There were complimentary cookies after dinner too! It was my friends birthday so we also got limoncello drinks to top off the night! I loved it here, will definitely be back!!

As a huge foodie, Carbone has been on my foodie bucket list for as long as I can remember! I have to say, it is well worth it! The free bread, picked cauliflower, and parmesan is a great touch to get your meal started! The table side Caesar salad was great -- I was expecting the croutons to be crunchy, but they were not! It was still really good though! The spicy rigatoni was really good! That was my favorite part of the meal. It did not taste like I was expecting, but it was delicious!

The food here is good, but in comparison to other Dallas Italian spots it's mediocre for the price. Italian spots by Dallas based hospitality groups Vandelay and Duro hospitality will serve you tastier food, with less pretense. We tried the Fettuccine con Funghi, Tortellini al Ragu, and the Spicy Rigatoni Vodka and were most impressed by the Spicy Rigatoni Vodka (as expected), although someone in our group remarked that it tasted like SpaghettiOs. The vodka sauce is not spicy or terribly complex, but the pasta texture is good. The Tortellini and Fettuccine were similarly not remarkable. The $31 caesar salad, notably prepared table side, was just all right. We waited an hour for our 8pm reservation on a Thursday night, the hostesses were not accommodating or apologetic about this each time we checked in over the hour long wait. We were most disappointed with our service, our server seemed to be asking our table and those around us pointed questions about if we were visiting from out of town, if we were students, etc, and apparently our answers were not to his satisfaction as he did not return to our table after taking our order, not even to drop the check, despite operating within what appeared to be a tight knit four table section. The dinner theater ambiance is in full force here, and is the main reason for the four stars I gave. Carbone is still a restaurant you should visit and experience, the interior is amazing, but the food is not something to look forward to.

Checked out Carbone while visiting Dallas, and had a great experience dining here. Ordered the Calamari Marco, Caesar alla ZZ, Spicy Rigatoni Vodka, Lobster Ravioli, and Tortellini al Ragu. There is bread service, and the server does provide several bread options where you can definitely get full off of it if that's all you eat. Had to stop myself from eating more bread because it was delicious! The good: The Spicy Rigatoni Vodka definitely lived up to the hype, and we ordered double portion of it. It was definitely the highlight of the meal, and would recommend it. Lobster Ravioli and Tortellini al Ragu are both delicious as well. Basically, can't go wrong with your choice of a pasta dish. The bad: Nothing, I enjoyed everything I ate. Overall, definitely will come back for more of the Spicy Rigatoni Vodka!

Amazing ambiance that's perfect for a date night. Some fantastic dishes, some okay dishes. Everything is overpriced but that doesn't mean you won't enjoy your experience. 3 dishes I enjoyed: - Spicy rigatoni is delicious and I would order this again. It's not actually that spicy, more just has a touch of spice. - The complimentary bread (Grandma, cheesy garlic) tasted great. A chunk of Parmesan, plate of salami, and pickled cauliflower were also complimentary. - Calamari was solid. I also got the lobster ravioli, meatballs, and a slice of tiramisu. To me, these weren't standout dishes. Some helpful notes: - Plenty of free self parking at Carbone and a free parking lot about 2 blocks away if that one is full. - Waiter will ask if you want bottled or still water, if you don't say tap you will be charged (just like in Europe). In conclusion, Carbone can be summarized in these two points: - Is everything overpriced? Yes. - Ignoring the price, is there enjoyable food and atmosphere? Yes.
